Easy Aluminum Foil Cheeseburgers

This festive and simple recipe can turn any dinner into a party! While you might typically associate foil packet cooking with campsites and grills, they’re also awesome in the oven. I like to make these easy cheeseburgers once in a while as a treat that my kids love as much as fast food— but which I know is actually homemade and healthy.

It’s also a breeze to make and clean up, because all of the ingredients are contained and cooked right in the foil. Each serving contains a nice pile of roasted potatoes, a well-seasoned hamburger patty, and a thick, savory slice of onion rings. Cooking them all together creates a wonderful melding of flavors.

You can serve these bad boys as-is, with a side salad, or break out some good hamburger buns and add toppings like mayo, mustard, ketchup, pickles, and more!

What You’ll Need

This recipe is seriously the best for a busy night. As you can see, you only need a few basic ingredients to make it! Plus, it’s something fun and different, which is always a good thing at my house!

  • Hamburger Patties: You’ll need 4 quarter-pound hamburger patties. I used 85/15 beef patties for this recipe, but you can go with whatever you like!
  • Onion: Thickly slice one red onion into rounds. Do not separate the rings.
  • Potatoes: You’ll need 4 to 5 medium Yukon Gold potatoes, peeled and diced.
  • Olive Oil: To oil the potatoes lightly before baking, you’ll need a tablespoon of olive oil.
  • Cheese: To top your burgers, use 4 slices of cheddar cheese.
  • Garlic Powder: Garlic powder adds a delicious flavor to these baked burgers! 
  • Salt and Pepper: To taste. I like to use sea salt and freshly cracked pepper.
  • Hamburger Buns: Optional—you can definitely serve this dish without buns! They do make delicious cheeseburgers with buns, though!
  • Aluminum Foil: Okay, so this isn’t an ingredient, per se, but you’ll need four 12-inch sheets of heavy duty aluminum foil to make this recipe.

How to Make Cheeseburgers in Foil

I have to admit, I get a kick out of making this recipe, because it’s just so simple and the cooking is almost completely hands-off. Once you try it, I bet you’ll feel the same!

  1. Prep the Potatoes. Peel and dice the potatoes into half-inch chunks. Place in a small bowl, and toss with 1 tablespoon of olive oil. Set aside.
  2. Arrange Ingredients on Foil Sheets. Arrange the four sheets of aluminum foil on your work surface. Divide the potatoes evenly onto the foil sheets. Top each pile of potatoes with a slice of red onion, followed by a hamburger patty. Season the hamburgers with salt, pepper, and garlic powder.
  3. Fold and Bake. Fold the foil into pouches. You do this by folding over two opposite ends of the foil sheets, and then rolling up the remaining open ends. Place the prepared pouches on a baking sheet. Bake in a preheated, 400°F oven for 35 minutes, or until the hamburgers register an internal temperature of 165°F.
  4. Melt the Cheese on the Patties. Carefully open each pouch; avoid letting the steam burn your hands or face! Place a slice of cheddar cheese on top of each burger, and bake uncovered for two minutes longer, to allow the cheese to melt.
  5. Serve. Serve the cheeseburger pouches as-is, with ketchup, or place on buns with favorite toppings. Enjoy!

Tips for Success

Want to know more about making foil packet dinners? Great! Here are a few simple tips to keep in mind as you make this easy recipe.

  • Watch Your Seasonings: This basic recipe delivers, but you can also spice things up (literally) by tossing the potatoes with salt, ranch seasoning, taco seasoning, or onion soup mix. There are tons of ways to make it delicious! Just be careful not to overdo it or the foil packets will come out too salty.
  • Reduce Fat if Necessary: Fatty hamburger patties can release a lot of grease and juice, which some people love and other people hate! Try substituting lean hamburger or even turkey patties if you don’t want the extra fat.
  • Cooking Times May Vary: Some ovens run hotter than others, so watch your cook times. The easiest way to tell when meat is done is to use an instant-read thermometer. To test for doneness, insert an instant-read meat thermometer through the side of a burger into the center. The internal temperature should read 160°F for ground beef patties.

Variation Ideas

You can do a lot with this basic recipe! Let’s get into some yummy variations on the classic, shall we?

  • Spicy: Take things to a spicy new level by using Pepper Jack cheese instead of cheddar, and adding diced red bell pepper to each packet. You can serve these with sour cream and guacamole to help cool down the heat. 
  • Veggie: Add your favorite veggies to each packet for more nutrition. You can go with chopped or sliced carrots, cut green beans, corn kernels, mushrooms, and more!
  • Sausage: Substitute your favorite kielbasa for the burgers, and hot dog buns for the hamburger buns! This is a delicious way to cook a foil packet dinner!

How to Store and Reheat Leftovers

  • Leftover meat and veggies can be stored in airtight food storage containers or bags. Cool before storing.
  • Properly stored, your leftovers will keep in the refrigerator for up to 3 days.
  • To reheat, simply place your meat and veggies in a covered skillet over low heat until heated through. Do not overcook, or the patties will dry out.

    These really didn’t turn out anything like what the photo looked like, especially the potatoes. When I opened the foil packets, they were filled with liquid, potatoes were cooked but a soupy mess and not crisp and brown like the ones pictured. Followed the recipe exactly. Disappointing.
