Why Cook Short Ribs in the Instant Pot?

Using the Instant Pot makes this satisfying meal incredibly easy and cuts the cooking time down to just 1.5 hours – with most of that time hands-off!

Simple Ingredients

Pat the ribs dry with paper towels, season them well with salt and pepper, and set them aside.

Season the Ribs

Select "Sauté" function on the Instant Pot and heat the olive oil. Cook the ribs in the hot oil in batches, then set aside.

Sauté the Ribs

Add the chopped onion and carrots to the Instant Pot, and cook them for a few minutes. 

Cook the Veggies

Add the minced garlic and sauté until it’s soft and fragrant.

Add the Garlic

Pour the beef broth, tomato paste, balsamic vinegar, and chopped fresh thyme. Stir well.

Add the Broth

Nestle the short ribs into the sauce, add the bay leaves, and cook on high pressure.

Cook the Ribs

Allow the pressure to naturally release for 10 minutes. Then, carefully do a quick release.

Release the Pressure

Strain the broth. Then add cornstarch, water, and honey, and simmer until thickened.

Simmer the Sauce

Coat the ribs evenly with the thickened sauce. Then serve hot, garnished with parsley.
