Loaded Baked Potato Soup

Cheesy Potato Soup

This thick and creamy soup is perfect for winter and fall, and makes a great lunch or easy dinner.

Bake the potatoes in the oven, then peel the skins off and mash them.

Bake the Potatoes

Melt butter in a large saucepan. Then add in the onion and minced garlic, and cook.

Cook the Onion

Whisk in the flour to make a paste, then turn down the heat.

Make a Roux

Slowly pour in the milk, half and half, and chicken broth. Then add salt and pepper, and stir.

Add the Liquids

Add in the mashed baked potatoes, and let it simmer gently for about 10 minutes.

Add the Potatoes

Remove from the heat, and blend it with a blender until creamy.

Blend

Add in the shredded cheese and stir until fully melted.

Add Cheese

Serve the soup hot, topped with more cheese, bacon, green onions, and sour cream.
