What Is Mexican Chicken Casserole?

This easy recipe is made with a creamy sauce, two kinds of cheese, plenty of chicken, and your favorite Mexican seasonings!

You'll only chicken and a few other ingredients to make this easy recipe.

Simple Ingredients

Lightly grease a 13×9 baking dish and sprinkle crushed tortilla chips across the bottom.

Make the First Layer

Heat the bechamel or cream of chicken soup, and whisk in the mozzarella. Pour ⅓ of this over the chips.

Heat the Bechamel

Top with ¾ cup of Mexican blend cheese, a third of the chicken, ⅓ of the beans and corn, and ⅓ of the chips.

Add the Chicken

Repeat the bechamel, cheese, chicken, beans/corn, and chip layers two more times.

Repeat

Top with the remaining cheese and the chopped tomatoes.

Top the Casserole

Bake, uncovered, for about 20 minutes, or until the cheese is completely melted.

Bake

Garnish with cilantro, green onions, and chopped jalapeno, and serve. Enjoy!
