- 2 tablespoons olive oil
- 1 cup cherry tomatoes
- 1 cup grape tomatoes
- ½ cup pitted Kalamata olives
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 10.4 ounces Boursin Cheese, (2 packages)
- 2 cups dry funghetti pasta or fusilli pasta
- ⅓ cup water from the cooked pasta cooking water
- 2 cups fresh baby spinach
- ½ cup Freshly Grated Parmesan Cheese
- Fresh basil leaves
Preheat the oven to 375°F.
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
Reserve ⅓ cup of the pasta cooking water before draining.
While the pasta is cooking, in a casserole dish, combine cherry tomatoes, grape tomatoes, and sliced Kalamata olives. Drizzle with olive oil and sprinkle with Italian seasoning, kosher salt, and black pepper. Toss to coat evenly.
Form two wells in the mixture, then place a cheese puck into each one.
Place the casserole dish in the preheated oven and bake for 25-30 minutes, or until the tomatoes soften and release their juices and the cheese is melted.
Remove the casserole dish from the oven and carefully mix through the tomatoes and cheese with a fork.
Stir in fresh baby spinach until it begins to wilt; the residual heat from the tomato mixture will help in cooking the spinach.
Add the cooked pasta and reserved cooking water, stirring until thoroughly combined.
Sprinkle freshly grated Parmesan cheese over the pasta and toss again to blend everything.
Divide the Boursin pasta evenly among serving plates, garnish with fresh basil leaves, and enjoy!
