No Bake Oatmeal Cookies

These healthy No Bake Oatmeal Cookies are made with pumpkin seeds and dried cranberries! This easy no bake treat is perfect for back-to-school snacking.

Ingredients

  • 1/2 cup unsalted butter, (1 stick, or 8 tablespoons butter)
  • 1 cup granulated sugar
  • 2 tablespoon cocoa powder
  • 1/3 cup milk
  • 1/4 teaspoon salt
  • 1/2 cup peanut butter
  • 2 1/2 cups old-fashioned oats
  • 1/2 cup dried cranberries
  • 1/4 cup pumpkin seeds

Instructions

  • Combine butter, sugar, cocoa powder and milk in a saucepan.
  • Set saucepan over medium heat, mix and stir until melted.
  • Bring mixture to a boil and let boil for 1 minute.
  • Remove from heat and stir in salt and peanut butter until thoroughly combined.
  • Add oats, cranberries and seeds; mix until well incorporated.
  • Line 2 baking sheets with parchment paper.
  • Drop tablespoons of cookie dough onto the parchment paper; shape and flatten to desired thickness and width.
  • Let stand in a cool, dry place for about 2 to 3 hours, or until completely cooled and set. You can put them in the fridge for quicker results.

Notes

Optional, but a suggestion: I always keep these cookies in the fridge because I think they taste better when cold.
