Equipment

  • Oven

Ingredients

  • 1 pound boule bread, (round loaf or a large baguette) see notes
  • 8 tablespoons unsalted butter, melted
  • 4 to 6 cloves garlic, minced
  • ¼ cup chopped fresh parsley
  • Salt and freshly ground pepper, to taste
  • 2 cups shredded mozzarella cheese

Instructions

  • Preheat oven to 350˚F.
  • Crosshatch the top of the bread using a serrated knife; slice it lengthwise, then widthwise, but DO NOT slice all the way through the bottom of the bread.
  • Melt butter in a bowl or a large glass cup.
  • To the melted butter, add garlic, parsley, salt, and pepper; stir to combine.
  • Brush the bread with the melted butter mixture, brushing inside the crosshatches, too.
  • Stuff each crosshatch with shredded cheese.
  • Wrap bread in foil.
  • Set the wrapped bread on a baking sheet and bake for 20 minutes, or until cheese is melted and bread is warm.
  • Remove from oven and let stand 5 minutes.
  • Serve.

Notes

Any French bread, whether it’s a large baguette or a boule, is a great choice for this recipe. A sourdough boule is also really tasty, as is a brioche shaped in a round.
