Blueberry Apple Baked Oatmeal

  • Preheat oven to 375˚F.
  • Grease a 9-inch baking dish with butter and set aside.
  • In a mixing bowl combine oats, brown sugar, pecans, cinnamon, baking powder, salt, and ground nutmeg; whisk until well incorporated; set aside.
  • In a separate mixing bowl whisk the eggs to break them up.
  • Add milk to the eggs and whisk to combine.
  • Whisk in the vanilla and melted butter.
  • Add the milk mixture to the oat mixture and stir until completely incorporated. Set aside.
  • Arrange the apples and blueberries on the bottom of the previously prepared baking dish.
  • Pour the oatmeal mixture over the fruit and smooth out the top with a spoon.
  • Bake for 40 minutes, or until bubbly and top is golden.
  • Remove from oven and let stand 20 minutes.
  • Serve warm or at room temperature.
