- 8 to 10 russet potatoes, peeled and cut into 1-inch cubes
- 4 to 6 ounces cream cheese, room temperature
- 1 cup sour cream
- 2 tablespoons butter
- 1 teaspoon garlic powder
- ¾ teaspoon salt, plus more for boiling the potatoes
- Fresh ground black pepper, to taste
- Chopped fresh parsley, for garnish
Add the cubed potatoes to a large pot; fill with enough water to cover the potatoes and add ½ tablespoon of salt. Set the potatoes over high heat and bring the water to a boil; lower heat to a steady simmer and cover the pot.
Cook for 18 to 20 minutes, or until potatoes are soft and tender.
Remove from heat and drain in a colander.
Put the potatoes back into the pot and add 4 ounces cream cheese, sour cream, and butter; using a potato masher, mash the potatoes until creamy.
If you want creamier mashed potatoes, add remaining cream cheese.
Stir in the garlic powder, salt, and pepper; taste and adjust accordingly.
Spoon the mashed potatoes into a serving bowl and garnish with parsley and a pat of butter.
