Bacon Wrapped Grilled Shrimp
Jumbo shrimp are marinated in a flavorful blend of lemon juice, garlic and spices, then wrapped in bacon and grilled until crispy. It’s Bacon Wrapped Grilled Shrimp, your new favorite summertime appetizer!
- 12 slices bacon, halved, (don't use thick-cut bacon)
- 3 tablespoons lemon juice
- 1 clove garlic, minced
- 1 teaspoon sweet or smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- 3 tablespoons olive oil
- 1 to 1.5 pounds large or jumbo shrimp, or about 24 shrimp, peeled and deveined, tails ON
- Chopped fresh parsley, for garnish, optional
Preheat oven to 400˚F.
Place halved bacon slices on a wire rack set over a foil-lined baking sheet.
Place in the oven and bake for 10 minutes.
Remove bacon from oven and set aside.
Meanwhile, in a mixing bowl combine lemon juice, garlic, paprika, oregano, salt, and olive oil; whisk until thoroughly incorporated.
Add shrimp to the lemon juice mixture; let stand about 10 minutes.
Preheat your grill to medium-high.
Starting at the tail, wrap each shrimp with 1 piece of bacon.
Using a toothpick, secure the bacon to the shrimp.
Grill for 10 to 12 minutes, or until bacon is crispy and shrimp is cooked through. Flip the shrimp over halfway through cooking.
Garnish with parsley.
