The Best Crockpot Buffalo Chicken Dip, Perfect for Game Day!

Cheesy buffalo dip is the perfect balance of spiciness, creaminess, and savory goodness. It’s a winning combo, for sure! The textures and flavors of a good buffalo chicken dip are basically irresistible in my book. Once you try it, I’m sure you’ll agree.

If you’re looking at a get-together in the future (game day, anyone?), you should definitely try this slow cooker version of the classic! It always disappears fast, with everyone coming back again and again for more. You can serve it with chips, veggies, crackers, and more.

Why You’ll Enjoy This Cheesy Buffalo Dip

You’ll crave this crockpot buffalo chicken dip for several good reasons.

  • Bold and Spicy: This dip is made with Frank’s Red Hot sauce, which is not overly spicy but definitely adds a nice kick to the dish.
  • Creamy and Cheesy: The dip’s base of softened cream cheese and shredded cheddar cheese creates a rich and velvety texture you won’t be able to resist.
  • Savory and Meaty: Tender, juicy shredded chicken adds heartiness and depth.
  • Convenient: This dip is made in a slow cooker, and as we all know, there’s basically nothing more convenient than that! Crockpot buffalo chicken dip is a fuss-free appetizer that you can serve warm and keep warm with ease.
  • Versatile: Pair this with tortilla chips, crackers, veggies, or even use it as a topping for other dishes like baked potatoes!

The List of Ingredients

These are the basic-but-flavorful ingredients that make crockpot buffalo chicken dip the ultimate crowd-pleaser.

  • Chicken: You will need cooked, shredded chicken. I use this recipe for baking my chicken breasts, but you could also grab a rotisserie chicken from the store.
  • Buffalo Sauce: Frank’s RedHot® Original Cayenne Pepper Hot Sauce is the type I use. Don’t use wing sauce, which has other ingredients added to it – you want real hot sauce. Other brands include Tabasco, Cholula, Texas Pete, Louisiana, etc.
  • Cream Cheese: Softened to room temperature.
  • Ranch: Any ranch dressing that you like.
  • Cheddar Cheese: Shredded cheddar cheese.
  • Blue Cheese: You can use blue cheese crumbles or leave them out if you don’t like blue cheese.
  • Onions: Chopped green onions, for garnish.
  • Dippers: Tortilla chips, crackers, celery sticks, or whatever you like.

How to Make Crockpot Buffalo Chicken Dip

Making this savory dish couldn’t be easier. You just mix everything together and let the slow cooker do the rest!

  • Combine the Ingredients. Place cooked shredded chicken in the slow cooker. Then add the hot sauce, cream cheese, ranch dressing, cheddar, and half of the blue cheese crumbles. Give all of that a stir to combine.
  • Cook. Let the dip cook on LOW for 2-1/2 hours or until it’s heated and the flavors melded together. About halfway through cooking, stir it again to help the cheeses melt.
  • Enjoy! Garnish the dip with chopped green onions and crumbled blue cheese (this is optional but recommended). Serve with your favorite dippers, keeping the crock pot set to “warm” so that the dip stays melty and hot.

Why Is My Buffalo Chicken Dip Runny?

It’s so frustrating when a dish that should be thick (looking at you, gravy) turns out soupy or runny instead. If you run into this problem with crockpot buffalo chicken dip, there could be a few different reasons:

  1. Cooking Liquids: Make sure to drain any excess liquid from the cooked chicken before adding it to the slow cooker. Excess chicken broth or cooking juices may turn the dip runny.
  2. Overcooking: Cooking the dip for too long can cause the ingredients to break down and release more liquid, leading to a runny texture.
  3. Ingredient Measurements: Make sure to measure correctly for a thick, creamy dip.
  4. Low-Fat Ingredients: Some low-fat versions of the ingredients here may break down and fail to thicken as much as their full-fat counterparts.
  5. Unmelted Cheese: If your cheese hasn’t fully melted, the dip may seem more soupy than it should be. Make sure to stir well and thoroughly melt the cheese.

How to Fix Runny Buffalo Chicken Dip

If your dip seems runny, you can try the following tips to thicken it up a bit:

  • Cornstarch Slurry: Adding a slurry (a small amount of cornstarch or flour mixed with water) to the dip while it simmers can help it thicken up.
  • Additional Cheese: Another option is to add more cheese to the dip, allowing it to melt and thicken the dip a bit more.
  • Additional Chicken: More shredded chicken can bulk up a soupy buffalo dip.

Recipe Tips and Variations

Here are a few helpful tips and variations to make sure that your buffalo chicken dip turns out just right.

  • Spicy Options: If you prefer a spicier dip, you can add additional buffalo sauce, cayenne pepper, or sriracha. If you’d like to dial back the heat, you can reduce the amount of hot sauce.
  • Cheddar Cheese Options: While cheddar cheese is great in this recipe, you could also use different types of cheeses, such as Monterey Jack, Colby, or other melting cheeses.
  • Blue Cheese Options: If you don’t want to use blue cheese, goat cheese, and feta cheese work well, too.

What Else Goes with Buffalo Chicken Dip?

While the dip is already fantastic on its own, you can elevate your snack spread by serving it with a variety of accompaniments. Here are some great options to consider:

  • Bagel Chips: Homemade Bagel Chips are so good! Transform your favorite bagels into a crunchy, crispy dipper, perfect for dunking into this hot buffalo dip.
  • Baked Potatoes: Make some Instant Pot Baked Potatoes, and use this dip for an all-in-one creamy, cheesy, meaty topping. Your family will beg you to make this!
  • Veggies: You won’t be sad if you serve this with carrot and celery sticks, but you can also do something more complex by making Zucchini Fritters! These veggie-laden morsels are excellent with any tangy, creamy dip.

Storing and Reheating

Buffalo chicken dip doesn’t last long most of the time – everyone eats it up! But if you have any leftovers, keep them fresh to enjoy again by storing them and reheating them properly.

  • Storing: Allow the dip to cool to room temperature, and then scoop it into airtight containers or zip-top bags. Seal and store in the fridge for up to 3 days.
  • Reheating: To reheat crockpot buffalo chicken dip, spoon the desired amount into a microwave-safe dish and heat for a few seconds at a time on medium heat. Stir it after each burst in the microwave to help it heat evenly. You can also bake the dip at 350°F until heated through.
  • Freezing: This creamy dip doesn’t freeze very well. The dairy in the dip can separate and become grainy when frozen and thawed.
