An easy dinner idea that comes with its own appetizer and side dish! Everything bakes together in the same pan for convenience and added flavor. Plus, the sheet pan is lined with foil for easy cleanup. Win!
This dinner recipe combines juicy balsamic chicken breasts with seasoned potatoes, balsamic tomatoes and fresh mozzarella cheese. Get ready to add this sheet pan meal to your weekly dinner menu!
Recipe Ingredients
This flavorful chicken dish is filled with healthy ingredients. Everything is seasoned well and then baked to deliciousness! Here’s what you’ll need:
For the Potatoes
- Yukon Gold Potatoes: Cut your potatoes into quarters to get the best baked potato wedges.
- Olive Oil
- Salt & Pepper
For the Balsamic Reduction
- Balsamic Vinegar
- Brown Sugar: Brown sugar will help intensify the flavor in your chicken!
For the Chicken
- Chicken Breasts: I like to use boneless, skinless chicken breasts for this recipe.
- Salt & Pepper
For the Tomatoes
- Cherry Tomatoes: Cut your tomatoes in half so they absorb the flavor of the vinegar.
- Balsamic Vinegar
- Olive Oil
- Salt
- Fresh Mozarella Cheese Balls (optional)
How to Make this Sheet Pan Chicken Dinner Idea
- Prepare for Baking: Preheat your oven to 425˚F, then cover a large rimmed baking sheet with aluminum foil. Lightly spray the foil with cooking spray and set aside.
- Season Potatoes: Place potatoes in a bowl and add oil, salt and pepper, mixing to combine.
- Roast Potatoes & Boil Vinegar: Transfer potatoes to your prepared baking sheet and roast them in the oven for 15 minutes.
- In the meantime, add balsamic vinegar to a saucepan and bring to a boil over medium heat.
- Add Brown Sugar to Vinegar: Stir in brown sugar and cook for 3 minutes, stirring constantly, until the mixture is slightly thickened. Remove from heat and set aside.
- Assemble Chicken: Lightly spray chicken breasts with cooking spray and season with salt and pepper. Place chicken breasts on top of potatoes.
- Add Balsamic Vinegar: Set aside one tablespoon of balsamic vinegar. Then, brush HALF of the remaining balsamic vinegar over the chicken breasts. Reserve the other half for later.
- Bake & Prepare Tomatoes: Bake chicken and potatoes for 20 minutes, then combine prepared tomatoes with balsamic vinegar, oil and salt.
- Add Tomatoes & Reserved Vinegar to Pan: Remove your baking sheet from the oven and brush chicken with remaining half of glaze. Add tomatoes around the chicken and cook for 5-8 more minutes, or until the chicken’s internal temperature reaches 165˚F.
- Remove from Oven & Garnish: Remove sheet pan from the oven and drizzle with remaining tablespoon of balsamic glaze. Garnish with basil and serve with mozzarella cheese, if desired.
Tips for the Best Sheet Pan Meal
- Place Chicken in the Center of the Pan: If you put your chicken breasts in the middle of your sheet pan, they’ll get super juicy and tender without cooking too quickly.
- Use an Instant Read Thermometer: The best way to tell when your chicken is done cooking is to check its internal temperature with an instant read meat thermometer. Your chicken should register at 165°F.
- Line and Spray Sheet Pan: It’s important to line your pan with foil and spray the surface lightly with cooking spray. This way, nothing will get stuck to the foil and you may not even have to wash your pan!
Variation Ideas
- There are plenty of ways to change up this chicken dinner. You can soak the chicken breasts in your favorite marinade instead of using balsamic reduction.
- You can also leave out the potatoes or tomatoes if you want a lighter meal.
- If you want to add even more flavor to this dish, throw in some different vegetables. Try adding broccoli, carrots or asparagus.

Ingredients
For the Potatoes
- 1 pound small yukon gold potatoes,, quartered
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
For Balsamic Reduction
- 1/3 cup balsamic vinegar
- 2 tablespoons brown sugar
For the Chicken
- 4 boneless, skinless chicken breasts
- 3/4 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
For the Tomatoes
- 1 cup cherry tomatoes,, halved
- 2 teaspoons balsamic vinegar
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- sliced fresh basil,, for serving
- fresh mozzarella cheese balls,, for serving, optional
Instructions
- Preheat oven to 425˚F. Line a large rimmed baking sheet with foil; lightly spray with cooking spray and set aside.
- Place potatoes in a bowl; add oil, salt & pepper and mix to combine.
- Transfer potatoes to prepared baking sheet and roast for 15 minutes.

- In the meantime, combine tomatoes with balsamic vinegar, oil and salt.
- Remove baking sheet from oven; brush chicken with remaining half of the glaze, add tomatoes around the chicken, and continue to cook for 5 to 8 more minutes, or until internal temperature of chicken registers at 165˚F.
- Remove from oven and drizzle with remaining tablespoon of balsamic glaze. Garnish with basil and serve with mozzarella cheese.
