So we’ve all heard of #TacoTuesday, I mean, who hasn’t?!? But are you starting to feel like your go-to taco recipe is getting a bit… tired?
Well, say hello to the EASIEST chicken taco dinner EVER. These taco chicken bites will quench your taco craving all while being low carb, low fat, and low calorie.
But, have no fear – low carb, low fat, and low cal does not mean no flavor! The lime and cilantro kick the fresh and light flavor up a major notch.

What Are Chicken Bites?
Chicken bites are the easiest and most fun way to eat chicken! My kids ask for them all the time and I love to serve them in place of nuggets. They are simply cubed pieces of boneless, skinless chicken breasts.
You can cube them yourself or even grab some already cubed at your local supermarket.
A tip for getting your chicken bites into perfect and evenly sized cubes is to cut them while they are still slightly frozen. This creates less mess and makes for much easier cutting.
In addition to being a great dinner option, these are also great as a party appetizer.
Ingredients for this Easy Chicken Recipe
The ingredients in this dish are so easy! If you don’t have taco seasoning in your pantry – you can easily make your own!
Here’s what you’ll need:
- boneless, skinless chicken breasts
- taco seasoning
- olive oil
- fresh cilantro
- Lime
How to Make Taco Chicken Bites
Chicken: Cut your chicken into bite sized cubes. Toss the chicken with taco seasoning and let it stand for 15 minutes.
Cook: Heat the oil in a large skillet over medium heat. Add the chicken in batches and cook for 5 to 6 minutes each.
Serve: Remove your skillet from heat. Garnish the chicken with chopped cilantro and serve with lime wedges.
How to Serve Chicken Bites
These chicken bites go great in tacos, burritos, or quesadillas. If you want to cut out the flour tortilla, you can opt for a corn tortilla or go without a tortilla entirely.
Serve them over a taco salad or rice – either Mexican rice or white rice. You can make a layered burrito bowl and top the whole meal with a fresh corn and black bean salsa. The amount of options here is crazy!
My kids love them as little dunkable bites. We dunk ours in cilantro lime dressing, salsa, or guacamole.
Tips for Storing and Reheating Leftover Chicken Bites
Leftovers can be stored in your refrigerator for 3-5 days in an airtight container.
I also love how nicely these freeze. This makes them even more perfect and easier. I almost always have a bag in my freezer in case I need a super quick weeknight dinner or an impressive appetizer for surprise visitors.
I like to reheat my taco chicken bites in a skillet over medium heat. Turn them often until they are heated through.

Ingredients
- 1 pound boneless, skinless chicken breast
- 2 tbsp taco seasoning
- 2 tbsp olive oil

You want to preheat the Air Fryer to 400˚F, then, cook the chicken bites for around 6 to 8 minutes, or until internal temperature reaches 165˚F. Also, don’t crowd the air fryer. Cook the chicken in batches and don’t put more than one layer of chicken bites at a time.
