For the best French toast, you want a sturdy bread that absorbs liquid well. I often use French bread, like in this recipe, but I’ll also use brioche or eggy challah bread. In a pinch, you can use regular sandwich bread. You want slices that can absorb the batter but also hold their shape well while you pan-fry the French toast.
Choose a thick-cut bread, or make sure to cut thick slices if you’re cutting it yourself. Some other ideal breads for French toast include breads that are labeled “Texas toast” or “hearty” bread.

- Make the batter. Blend the bananas, eggs, whole milk, granulated sugar, vanilla extract, cinnamon, nutmeg, and a pinch of sea salt in a food processor.
- Slice the bread. Cut the bread into thick slices.
- Warm the pan. Heat a large skillet or griddle over medium heat and melt in some coconut oil or unsalted butter.
- Soak the bread. Dip each slice of bread into the banana-egg mixture, then cook them on the hot skillet or griddle until golden brown.
- Serve. Drizzle the French toast with maple syrup, add sliced banana and pecans, and top with a dollop of chocolate hazelnut spread.

- Soak the bread. Thoroughly soak the bread in the batter before frying the piece of toast. A good amount of time to aim for is about 30 seconds on each side so that the bread doesn’t have any dry spots. You can press the bread into the batter to make sure it gets completely submerged.
- Add a little orange zest. I love stirring in the zest and/or juice of half an orange to the batter for a little citrus zing.
- Use ripe bananas. How do you tell that a banana is very ripe? Its color should be a bright yellow with brown spots, and it should be slightly soft (though not mushy).
- Keep it warm in the oven. If you are making a big batch of French toast, you can keep the slices you’ve already cooked warm in the oven until you’re ready to serve. Place the slices on a baking sheet and warm them in a 200°F oven for up to 30 minutes.
- Double the batch. Speaking of making a larger batch, you can easily double this recipe to serve a crowd.

- Fridge – Place the French toast slices in a sealable bag with a piece of parchment in between each one, and store in the fridge for up to 3 days.
- Freezer – Let the banana French toast cool, then transfer it to a baking sheet. Place the baking sheet in the freezer for 30 minutes, then transfer the frozen French toast to a freezer-safe sealable bag or freezer-safe container and store it in the freezer for up to 3 months. Thaw the French toast in the fridge before reheating it.
- To Reheat – You have several options for reheating banana French toast. Place a slice or two of toast on a plate and microwave it for 2 minutes until warm. On the stove, add the French toast to a pan and warm it over low heat until hot. Or, reheat French toast on a baking sheet, covered with foil, in a preheated 350°F oven for 10-15 minutes.

Ingredients
For the Banana French Toast:
- 2 small ripe bananas
- 4 large eggs
- 1 cup whole milk
- 1 tablespoon granulated sugar
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- pinch of sea salt
- 8 slices French bread or sourdough loaf, cut into thick size
- 4 tablespoons coconut oil or unsalted butter, for frying
For serving:
- pure maple syrup, for serving
- 1 banana, sliced or chopped, for serving
- ⅓ cup chopped pecans, for serving
- chocolate hazelnut spread, for serving
Instructions
- Make the banana-egg mixture. Place the ripe bananas, eggs, whole milk, granulated sugar, vanilla extract, cinnamon, nutmeg, and a pinch of sea salt into the bowl of a food processor or a high-powered blender. Blend until the mixture is smooth and free of lumps.
- Prep the bread. Slice the bread into 1-inch thick slices.
- Heat the oil. Heat a large skillet or griddle over medium heat and add 1 tablespoon of coconut oil or unsalted butter.
- Dip the bread. Dip each slice of bread into the banana-egg mixture, ensuring both sides are well coated (soak for about 30 seconds until the bottom half is thoroughly saturated, then use a fork to gently flip the bread and allow it to soak for another side 30 seconds). Let any excess batter drip off.
- Cook. Place the coated bread slices onto the hot skillet or griddle. Cook for 3-4 minutes on each side or until golden brown and slightly crispy. Continue this process, adding more coconut oil or butter to the skillet as needed until all the bread slices are cooked.
- Transfer to a plate. Arrange the Banana French Toast slices on a serving platter.
- Add syrup and toppings. Drizzle the french toast with pure maple syrup and top with slices of banana and chopped pecans.
- Serve. Add a dollop of chocolate hazelnut spread on the side, and enjoy.
